Dry Riesling · Pinot Noir · Blanc de Blancs · Sauternes · Grüner Veltliner · Chenin Blanc · Pet Nat 

Look for something with good acidity — it's your best friend with rich, creamy Irish cheese.

Can't go wrong with a proper pint of Guinness or Murphy's alongside this board. It's tradition for a reason.

Sparkling anything cleanses the palate between cheeses. Strong black tea with the brown bread crackers and Cooleeny is a very Irish move — and a great one.
