Today we want to talk about pairings. If you know anything about us, you know that we are all about cheese and the things that pair with cheese. In fact, every curdbox we send out into the world is EXACTLY that: an edible story of cheese + pairings that all revolve around a theme.
Yes, we have the best job in the world. We get to meet small batch makers and try their goods (sometimes before they are even available to sell!) We get to try lots of different foods so what we can come up with one fun and interesting story. We get to talk about the curdbox we put together on our Curdcast podcast and we get to introduce you, the public, to 72 new foods a year!
But first, let's chocolate...
We have recently been working with a fantastic business in the Greater Boston Area called Chocolate Therapy owned by Pam and David Griffin. We met in a great business program for Small Food-based Business for Women and Minorities. We're grateful for the wonderful food-focused support here in Boston! Such a vibrant community.
We finally had the time to sit down and look at our cheeses and their chocolates. We had a ball but wanted to share some of what we found.
CHEESE + CHOCOLATE PAIRING GUIDE
goat's milk cheese
Goat's milk cheeses are tangy and love to be paired with citrus flavors. We paired them with Blueberry Lemon Basil, Limoncello, Key Lime and Vitamin C truffles.
cheddar cheese
Cheddar cheese likes to be friends with just about everyone. Think about pairing this with fun combinations like London Fog (tea-flavored), Seasonal French Toast (hints of maple!) and Black Coffee truffles for a new way to enjoy this classic cheese.
blue cheese
Think sweet or sweet and spicy when looking for interesting pairings with blue cheese. The saltiness of the cheese really makes these pairings sing. We liked the Black Jack Caramel (Thank you Jack Daniels), The Cure and the Strawberry Balsamic Modena truffles with our Stilton.
bloomy cheese
Last but not least (and usually thought about first) is our soft Bloomy style cheeses like Bries and triple creams. Here we thought about what we really love with this type of cheese–jams and jellies so we paired this with a lovely and fruity set, Passion Fruit and Milk Chocolate Raspberry Gemme truffles.
So, are you craving a chocolate and cheese board now? Sorry, but not sorry!
