February’s Curdbox is an all-Italian cheese plate feast! 

Fratella Beretta prosciutto rolls sit atop Perenzin caciottona capra al fieno. This sheep’s milk cheese is wrapped in hay, and has a medium body and versatile flavor. I paired this with Lay Low, a super sessionable hazy IPA from Monday Night Brewing with just 3.2% abv and 90 calories. This beer’s laid back hop flavor leaves plenty of room to taste the intricacies of the prosciutto and cheese. 

Hollow Pointe Brewery Schlossbier is a dunkel lager with a toasty, sweet malt character that complements Mitica raw Italian forest honey on creamy, slightly funky bufaletto cheese from Caseificio Defendi Luigi.

Lastly, caciocavallo du bufala is a 100% buffalo milk cheese with a provolone-like body and flavor. New Holland Tangerine Space Machine IPA has a big fruit-forward nose and flavor that’s balanced perfectly by the mild cheese.
