Pril Gouda by L'Amuse
We’re starting the month off strong with a Gouda from the Dutch company L’Amuse—one that may be aged for only six months, yet carries the depth and character of a far older cheese. Celebrated affineur Betty Koster, who founded L’Amuse with her husband Martin in 1989, has become known for her unique method of aging Goudas at warmer-than-usual temperatures. This careful approach coaxes out a creamy, fudgy texture and layers of flavor that feel both indulgent and balanced. Here, that craft shines through: every bite unfolds notes of butterscotch, dark caramel, and roasted hazelnuts, finishing with a gentle sweetness that lingers without overwhelming. Made in the Beemster and Schermer regions just outside Amsterdam, it’s a cheese that blends tradition with innovation—comforting and refined, it proves age is just a number—especially when the flavor is this good.
Red Wax Gouda by Dutch Mill Dance
The iconic red wax of this Dutch classic from Dutch Mill Dance has a way of catching your eye, but it’s what’s inside that keeps you coming back. Beneath the protective shell lies a pale yellow cheese with a smooth, semi-hard texture that feels both velvety and satisfying. Over the course of a year, it takes on a flavor that’s mellow at first, then gradually unfolds into nutty, savory richness with a touch of herbal complexity in the background. Crafted in the Netherlands by a company that has built its reputation on honoring traditional methods while keeping their cheeses approachable and full of character, it carries with it both history and heart.
Smoked Gouda by Dutch Mill Dance
Also from Dutch Mill Dance is a Gouda that carries a quiet kind of magic in every bite. Smoked the old-fashioned way, in ancient brick ovens over smoldering hickory embers, it takes on a depth that feels both earthy and comforting. Beneath its natural rind lies a pale yellow interior, smooth and creamy, that balances a mild nuttiness with just the right touch of smoke. There’s even a whisper of dark Belgian beer in its aroma, which adds yet another layer of richness to its character. Coriander Honey by Mitica
From the hills of Italy comes a honey unlike most you’ll ever taste. Born from the nectar of delicate coriander flowers, with a golden amber glow and aromas that call to mind a bustling Mediterranean spice market—it unfolds in layers of fennel, gentle spice, and soft sweetness. Behind it are brothers Fabrizio and Pierpaolo Cazzola, who began tending bees more than twenty years ago, eventually turning a passion into a business when friends encouraged them to share their honey with the world. Today, Mitica brings their work to the U.S., offering a glimpse of Italian beekeeping at its most soulful and unique.
Honey & Balsamic Dijon Mustard by Edmond Fallot
Since 1840, Edmond Fallot has stood as an enduring emblem of independent, family-owned excellence that has mastered the art of crafting traditional French mustards. In their Honey and Balsamic Dijon Mustard, the soft touch of honey and balsamic vinegar gracefully melds with the mustard's zesty kick, resulting in a combination of flavors that work together perfectly. The Fallot family's expertise shines through as they perfectly balance the robust hints of mustard with the gentle sweetness of honey and balsamic, ensuring no note overpowers the other.
