January often arrives with pressure—to reset, restrict, or start over. This box was created as a different kind of beginning. One rooted not in rules, but in good food made carefully and with intention. This box is your green light to start the year well.

I’m Julianne, owner and co-founder of Curdbox, and Green Light is about opening the year with clarity and ease. The foods in this box reflect the way people have eaten well for generations: relying on farmers, herders, and makers who work with their land rather than against it. Herbs, olive oil, nuts, and slow-crafted cheeses have anchored balanced eating for centuries—not as trends, but as everyday pleasures shaped by place and season.
Inside, you’ll find cheeses made on working farms where animals graze, milk is handled with care, and time plays an essential role. From herb-infused cow’s milk and fresh chèvre to traditionally made Manchego, each cheese highlights freshness first, comfort second, and a lingering finish that invites you back. These are the kinds of foods long present in regions often noted for longevity—not because they follow rules, but because they prioritize quality, simplicity, and respect for tradition.

The pairings follow the same philosophy. Olives, nuts, and simple baked goods bring balance and texture to the board while supporting the cheeses without distraction. So open the windows, take a deep breath, and let this board come together slowly. January doesn’t need rules—it just needs good food.

Toma Provence by Point Reyes


Rooted in the warmth and simplicity of Mediterranean flavors, this herb-infused cheese offers a familiar comfort with a thoughtful twist. Made from pasteurized cow’s milk, it has the smooth, buttery character of the classic Point Reyes Toma, paired with a carefully balanced blend of Herbs de Provence. Rosemary, basil, marjoram, savory, and wild thyme bring a savory, aromatic quality that feels clean and well-balanced rather than overpowering. The semi-firm texture remains soft and approachable, allowing the herbs to settle naturally into the creamy paste as it matures. The result is a cheese that feels both grounded and expressive, showcasing simple ingredients and the quiet pleasure of well-made food.

Herbal Fresh Chèvre by Blue Ledge Farm


Fresh and elegant, this chèvre reflects the care and intention behind its making. Produced by Blue Ledge Farm in Vermont’s green hills, it is hand-ladled in small batches, a method that gives the cheese its soft, cloudlike texture and gentle consistency. The goat’s milk brings a clean, tangy brightness that feels lively without being sharp, while a subtle mix of herbs adds savory depth and warmth. Every detail speaks to a philosophy rooted in respect for animals, land, and community, creating a cheese that feels as genuine as it is comforting.

Artequeso Manchego DOP (Semi-Cured) by Artequeso


Made in the heart of Spain’s La Mancha region, this semi-cured sheep’s milk cheese feels humble, yet quietly confident. Crafted by Artequeso using raw milk from local Manchega sheep, it reflects a careful balance of tradition and technique. The texture is firm but still creamy, with buttery richness up front, followed by gentle nutty notes and a touch of brightness that keeps it feeling fresh. There’s a clean, milky aroma beneath the natural rind that hints at open pastures and time well spent. It sits comfortably between young and aged, offering depth without feeling heavy, and a kind of warmth that makes it easy to appreciate its character.

Moroccan Picholine Olives by Villa Jerada


Vibrant and full of character, these olives capture the kind of everyday pleasure that comes from doing things the old way. Gathered by hand in Morocco and slowly brined by Villa Jerada, they keep a satisfying crunch and a bright green hue that feels alive. The flavor is lively and direct, with a pleasant tartness up front, followed by gentle nutty notes and a clean, fruity finish. Nothing feels overworked or heavy here, just a clear expression of olives treated with care and patience. Easy to appreciate, quietly distinctive, and shaped by time-honored methods and a respect for letting good ingredients speak for themselves.

Scourtins (Olive Biscuits) by Lark Fine Foods


Rustic in spirit but thoughtfully made, these French-style olive biscuits have a buttery shortbread base that crumbles cleanly and carries just enough richness. Pieces of cured Moroccan olives are found throughout, adding a savory depth and gentle savory note that plays nicely against the subtle sweetness. A light touch of sea salt brings everything into focus without overwhelming the biscuit’s delicate structure. They feel simple and well-balanced, yet refined, offering a texture and flavor that will have you coming back for more.

Organic Rosemary Almonds & Pistachios by Clif Family

 

This organic nut mix by Clif Family, blends almonds and pistachios with fragrant rosemary, a touch of citrus zest, and a gentle hint of garlic that brings everything into focus. The herbs feel fresh and aromatic rather than sharp, allowing the natural richness of the nuts to come through. Lightly sweetened and thoughtfully crafted, it reflects the kind of everyday cooking inspired by good ingredients, an appreciation for balance, and knowing when to let bold flavors stay clean and uncomplicated.
