October’s Curdbox theme is Halloween Quaranteen, making a board that’s a little bit spooky and a lotta bit delicious.
Chimay Vieux is a Belgian Trappist cheese with a dense body, bold flavor, and a pumpkin-orange hue. I loved pairing this cheese with Burial Beer Co.’s The Coronation, a 12% abv Belgian-Style Tripel brewed with lemongrass and bottle conditioned on champagne yeast. The Coronation strikes a rich balance of floral bitterness and malt sweetness reminiscent of caramel and red wine.
Sottocenere al Tartufo is a Venetian cheese with a gray ashy rind and the unmistakable umami flavor of black truffle. Black Knight Tilsit is a versatile Austrian cheese with flavor reminiscent of Gouda or a mild Cheddar. Piller’s Black Kassel salami chips on Tressors poppy and pepper waffle crackers were a welcome accompaniment to both cheeses, and I especially enjoyed Dalmatia Blue Plum Spread as a sweet counterpoint to Black Knight Tilsit. The Adoration of the Mystic Lamb is a Burial Farmhouse Brett IPA with a dry, crisp flavor adaptable to pairing with the entire box, bringing palate-cleansing carbonation and a refreshing touch of tropic fruit notes from Citra and Enigma dry hopping and a select strain of yeast.
